- 1 tsp. canola oil (plus 3 tablespoons, divided)
- 2 tsp. cornstarch

- 6 slices fresh ginger
- 2 scallions (the white portion only, sliced at an angle into ½-inch pieces)
- 2 cloves garlic (thinly sliced)
- 1/2 cup cremini mushrooms (or sliced white)
- 8 oz. straw mushrooms (rinsed in warm water and drained, optional)
- 8 oz. bamboo shoots (rinsed in warm water and drained)
- 8 oz. water chestnuts (rinsed in warm water and drained)
- 5 cups bok choy (washed and drained white, cut into 1 inch by 2 inch rectangles)
- 1 Tbsp. Shaoxing wine
- 1 cup chicken stock
- 1/4 tsp. sugar
- 1 tsp. oyster sauce
- 1/2 tsp. sesame oil
- 1 1/2 Tbsp. cornstarch (mixed with 1½ tablespoons warm water)
