Description
Covered in a rich mole sauce these Mexican-style prawns, this seafood recipe captures some of the classic flavors of Mexican cuisine. The mole sauce is made from a combination of sauteed onions, garlic, and red chili peppers with fresh lemon juice, chopped coriander and tomatoes. Keep the prawns whole, but make sure they are completely deveined. These Mexican-style prawns can be served as an appetizer or as a main entree with a side of rice.

- 1/2 lemon
- 1 can chopped tomatoes

Directions
- Peel the prawns carefully, leaving the head and tail intact.
- Devein the prawn by removing the black intestinal tract.
- Open the chilies and remove the seeds; chop and set aside.
