- 2 jalapenos (chopped,, seed if you like)

- 12 oz. fresh spinach (– of)
- 1 1/2 tsp. kosher salt
- 2 Tbsp. chopped cilantro (finely, stalks)
- 29 oz. diced tomatoes (plus 1 2/3 cups water to rinse out empty cans)
- 28 oz. enchilada sauce (can of)
- 6 oz. tomato paste (can of)
- 6 oz. green chilies (can of)
- 30 oz. black beans (drained and rinsed)
- 15 oz. frozen corn
- 1 cup shredded mozzarella (each, and Parmesan)
- 12 oz. ricotta
- 1 pkg. lasagna noodles
- 1/4 cup chopped fresh cilantro (roughly)

Directions
- Cook lasagna according to box instructions. Set aside and drizzle with some olive oil to keep from sticking.
- Heat the oil in a skillet on medium heat.
- Add the onion, bell peppers. cilantro stalks and chiles.
