My husband and I really enjoyed this recipe and I will use it frequently! I didn’t have any tomato paste open so I just used a tablespoon of ketchup. I doubt it made much difference. It was delicious!

I added poblano and jalapeno peppers and replaced the regular oregano with the Mexican variety and it was absolutely delicious!!!

Used butter in place of vegetable oil. Cooked dried black turtle beans from scratch instead of using canned beans. Will add a little more dried oregano, cumin and chilli powder as while very tasty, want to try with additional herb, spice and heat. Served with basmati rice, a little sour cream, a grating of tasty cheese and sliced scallions. Delicious!!
