- 1 zucchini (sliced into rounds)
- 1 red onion (small, cut into squares)
- kosher salt
- pepper
- 1/3 cup extra virgin olive oil (I used Early Harvest Greek olive oil)
- 1 lemon (zested and juiced)
- 3 garlic cloves (minced)
- 2 tsp. fresh thyme leaves (chopped)
- 2 tsp. oregano
- 1 tsp. ground cumin
- 1 tsp. chili pepper (mild, I used this Aleppo pepper)
- 1/2 tsp. ground coriander

I made these and they were absolutely delicious. I'm not a big fan of Thyme so I used rosemary and more oregano instead.
