- 1 pkg. Hillshire Farm® Smoked Sausage
- 1 1/2 cups uncooked long grain white rice
- 14 oz. chicken broth
- 1 cup water
- 1 onion (chopped)
- 1 cup fresh sliced mushrooms
- 2 cloves garlic (minced)
- 1 tsp. dried oregano
- 2 Tbsp. fresh lemon juice
- 6 oz. baby spinach (about 6 cups)
- 1 cup crumbled feta cheese
- ground black pepper (to taste)

Directions
- Cut smoked sausage into ½” cubes; set aside. Combine rice, broth and water in medium saucepan; bring to a boil, stirring occasionally. Reduce heat to medium-low, cover and cook 15 minutes. Remove from heat and let stand 5 minutes.
- Heat a 4 -5 quart pan over medium-high heat for 3 minutes. Add sausage and onion; cook, stirring occasionally 3-4 minutes or until onion is tender and sausage is lightly browned. Add mushrooms, garlic and oregano; cook 2 minutes, stirring occasionally. Reduce heat to medium-low; stir in lemon juice.
- Gently fold in cooked rice, spinach, feta cheese and pepper. Toss lightly for 1-2 minutes or until spinach is wilted.

Very good, simple and healthy! You can easily substitute 2-3 cups of ready-made rice, packaged or your own that was made ahead. Just add maybe a half cup of broth when you fold it in for flavor and moisture. Top with some fresh diced tomato and Greek olives, if you've got them!

delicious, I changed the sausage to apple chicken instead and used Quinoa too.

I used andouille sausage which gave it a nice kick and we were all pleasantly surprised by all the flavors. It was put into the ‘make again’ category by my kids!

This was delicious! I thought the ingredient list would be too fancy for my kids but they enjoyed this meal very much. Didn’t sub anything; followed exactly.

Not gonna lie I'm not a great cook but I can follow directions. This recipe tasted bland. I tried more salt and pepper but still was missing something.
