    I made a triple batch so had enough to share with company. Added a little extra dressing. Turned out great! Love the flavours but I love greek salad so this is very similar. AND very filling too!

    Everyone loved it! I hade made it x4. Used what we had on hand, so substituted with white onion and didn’t used the red pepper. Can’t wait to try this again and I’m sure the actual recipe is delicious!

    It was perfect!! I used balsamic vinegar instead of red wine vinegar and I added cucumber!! Soooooo delicious!!

    I make mine slightly different but I did add the dressing. Instead of roasted red pepper I use fresh any color peppers and garbanzo beans. I cook the quinoa in chicken broth as well. I try to make it so that the ingredients are simple so that anyone with allergies are in the know. I also serve this cold. Why, you may ask? Because it's made to be eaten after a sweat ceremony. After the ceremony people are famished and need good healthy food to replenish. I've been asked to bring it every time...... So 🙌

    yummy! i doubled the dressing and used italian seasoning instead of oregano and swapped the corn for tomato.

    Turned out great! I used twice as much dressing as called for, and think it works better. I also added garbanzo beans to the mixture

    So light and delicious! Unfortunately didn't have onions, but still turned our pretty good.
