One of the best quiches I have ever ate!

Not bad but didn’t love it maybe too much basil. If I make again slightly less sun dried tomatoes amd basil and ore cheese

This has been a staple in my house for over a year because it is just that good. It puts every other quiche I have ever had to shame . I recommend leaving yourself some extra time to cook and assemble. For instance, the onion takes at least 20 minuets to caramelize (, I use a sweet onion) the only other changes I have made over time is to use 4 eggs and 1/2 teaspoon or so of freshly ground nutmeg to the cream/egg mixture . Finally, the basil is not nearly as important as the fresh thyme . In fact eventually I have cut out the basil all together.
