- 1/4 cup flour
- 1 tsp. basil leaves
- 1 tsp. garlic salt
- 1/2 oregano leaves (dried)
- 1/2 tsp. rosemary leaves (fine chopped)
- 1/4 tsp. pepper
- 1 1/2 lb. boneless skinless chicken breast
- 2 Tbsp. olive oil (greek)
- 1 white onion (large, cut into wedges)
- 1 green bell pepper (large, cut into strips)
- 14.5 oz. diced tomatoes (undrained)
- 1/2 cup organic chicken broth

Directions
- Mix the first six ingredients in a shallow bowl and reserve 2 Tbs
- Coat the chicken evenly with the spice mixture.
- Heat the oil in a skillet and add the chicken.
- Cook on 3 minutes per side. Remove the chicken from the skillet and add the onion and pepper.
- Cook and stir for 5 minutes. Stir in tomatoes, broth, and 2 Tbs. flour mixture.Bring to a boil while stirring frequently. Return the chicken to skillet and reduce the heat to low.Cover and simmer for 10 minutes, or until chicken is cooked through.
