Description
This recipe for Mashed Cauliflower contains all your favorite aspect of mashed potatoes, but is lower in calories and full of the nutritional value of veggies. Creamy and full of robust flavor, this mashed cauliflower is seasoned with fresh thyme, lemon, and nutmeg for a delectable savory side. Cook the cauliflower first and then blend in a food processor before seasoning. This recipe recommends cooking the cauliflower in a mixture of half milk, half water, but these quantities can be adjusted to personal preference.
Ingredients
- 1 head cauliflower
- 8 sprigs fresh thyme
- 400 mL water
- 400 mL milk
- 2 Tbsp. margarine
- nutmeg (to taste)
- 1 lemon (zested)
- salt (to taste)
Directions
- Cook the cauliflower in a mix of water and milk. Ideally the mix should be half water and half milk, because I´ve made it with only milk and found it too rich.
- After cooking, blend everything well with a food processor or mixer.
- Add the olive oil, thyme, margarine, nutmeg, lemon zest, and salt while mixing.
- Serve with a drizzle of olive oil over the top.
