A quick and easy dinner with the winning combination of mango, chicken, ginger, chilli and mint.
Ingredients

- 500 grams chicken (sliced or diced)
- 1 mango (large, cut into chunks)
- 1/2 red capsicum (sliced)
- 1 carrot (cut into batons)
- 1/2 cup broccoli florets
- 1 brown onion (finely sliced)
- 1 ginger (thumb sized piece of, sliced)
- 1 Tbsp. fish sauce
- 1 Tbsp. kecap manis
- 1 tsp. rice wine vinegar
- 1 tsp. sambal olek
- 1 handful mint leaves
- 1 Tbsp. oil

Directions
- Combine chicken, ginger, sambal olek, kecap manis and rice wine vinegar. Allow to marinate for 20 mins - 2 hours.
- Heat oil in wok over medium- high heat.
- Add chicken in batches to brown. Remove from wok and set aside in a clean bowl.
