- 8 yukon gold potatoes (medium, cut into 1/2 inch wedges, about 2 lbs)
- 1/2 yellow onion (a medium, finely chopped, you will need a 1/2 cup packed chopped onion)
- 1/2 cup water (use plant milk for a richer sauce)
- 1 tsp. vegan Worcestershire sauce (I get mine at Whole Foods, use regular if not vegan)
- 1 tsp. garlic powder
- 1/4 tsp. ground black pepper (separated)
- 1/8 tsp. chile pepper (chipotle, optional, but gives a wonderful smoky,spicy kick)
- 1/4 cup nutritional yeast
- 5 oz. fresh spinach (4 packed cups)
- 1 can artichoke hearts (quartered, drained, rinsed well and patted dry)
- 1 worcestershire sauce
