Excellent!
Since I ran out of cottage cheese, I was not able to add it this time. My eggs used were premixed Southwestern Egg Beaters. The test of the recipe remained the same.

Excellent with the cottage cheese. I made it the other day and forgot to put in the cottage cheese and it was so so. I used random spices, this time nutmeg, turmeric, coriander and Mrs. Dash. And then also included a leaf or so of my potted herbs: Holy Basil, chives, Chocolate Mint, oregano, rosemary and thyme. Forgot the black pepper this time but it was great without it.

This recipe has the perfect ratios! I’ve made it several times and just made sure I had 8 eggs, 2&1/4 cups of cheese and 2 cups of veggies.

Such a good recipe. I did 12 muffin size, perfect. I also used sharp cheddar, to me it's important to have a good tasting cheese in this. I used lemon pepper seasoning, I think no matter what seasoning you can't go wrong

I already made these for a second week for breakfast. I never would have thought of including cottage cheese but it is a delicious ingredient to add even more protein. I made them in 8 oz ramekins and they turned out great.

Pretty good! I didn't have the spike seasoning so I used a Potlach seasoning from Williams Sonoma that I tend to sprinkle on over easy eggs. The mixture of cottage cheese and broccoli was really tasty. I will be making this again. Also I found that cooking the muffins for 30 mins had best desired results.
