I used one bag of cauliflower rice as I didn’t have fresh. I cooked the “rice” in the microwave according to package directions. I added rest of ingredients but used dried chives as I didn’t have any green onions. Topped with extra cheese and some bacon crumbles and put in two oven safe bowls and baked till hot and bubbly. The flavor was really good, like a twice baked potato. It was more like a baked rice dish rather than mashed. Will make again.

Exchanged the milk, sour cream, and butter for Greek yogurt...turkey bacon for bacon...havarti as cheese...green onions instead of chives (didn't have chives)...added chopped fresh dill (~1 TBSP)--husband thought it was WAY better than mashed potatoes!
Next time, will use very few green onions or try the chives if I have fresh
