Description
This creamy potato chowder tastes like a loaded baked potato, with bacon, cheddar, and green onions garnishing the simple soup. To change it up, you could add blanched broccoli at the end for more veggies. The recipe, which makes 8 cups, is a Yummly original created by Ivy Manning.
Ingredients

- 5 slices bacon (chopped)
- 1 medium yellow onion (chopped)
- 2 garlic cloves (minced)
- 3 Tbsp. all-purpose flour
- 3 1/2 cups chicken broth
- 3 large russet potatoes (1 3/4 lb. total, peeled and cut into 1/2-inch chunks)
- 1 cup whole milk (or 2% milk)
- 1 tsp. celery salt (or regular salt, plus more to taste)
- 1/2 tsp. black pepper (plus more to taste)
- 1 bay leaf
- 1 cup shredded mild cheddar cheese
- 3 green onions (thinly sliced)

Directions
- Cook bacon in a Dutch oven or other 5- to 6-qt. pot over medium heat, stirring occasionally, until crisp, 10-15 minutes. Remove bacon with a slotted spoon to a small plate. Pour off and discard all but 2 Tbsp. of the drippings in the pot.
- Add yellow onion to drippings in pot and cook, stirring occasionally, until translucent, about 4 minutes. Add garlic and flour and cook, stirring constantly, for 1 minute.
- Stir in broth, potatoes, milk, 1 tsp. celery salt, 1/2 tsp. pepper, and the bay leaf. Increase heat to high and bring to a simmer. Cover, reduce heat to medium-low, and simmer, stirring occasionally, until potatoes are fall-apart tender, 15 minutes.
- Remove pot from heat and discard the bay leaf. Break up potatoes with a potato masher, leaving some chunks for texture. Season soup with additional salt and pepper to taste if you like.
- Ladle soup into bowls and top with cheese, bacon, and green onions. Pass hot sauce at the table.
