Description
Loaded baked potatoes become even easier to serve and eat when turned into this cheesy casserole strewn with bacon and green onions. Everyone is going to be asking for this recipe!

- nonstick cooking spray
- 2 scallions
- 2 1/2 lb. Yukon Gold potatoes (peeled)
- 8 strips bacon (cooked and crumbled)
- 2 Tbsp. butter
- 1/2 cup sour cream
- 1/2 cup whole milk (more as needed)
- 1/2 tsp. garlic powder
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper (scant)
- 1 cup shredded cheddar cheese (1 cup is about 4 oz.)

Directions
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Finely mince the scallions and set aside.
- Dice the potatoes into 1/2-inch cubes and place in a large pot. Fill with enough water to cover the potatoes. Set the pot over medium-high heat and bring to a boil. Boil the potatoes until they can be easily pierced with a fork, 15-18 minutes.

really good. i added some ranch dressing instead of the milk
