Description
Trendy, heart-healthy tinned sardines star in this quick weeknight pasta. The bright seasonings, including lemon, garlic, capers, and red pepper flakes, are ones you may have on hand, so keep this recipe in mind for last-minute meals. All you need to add is a tossed green salad. The recipe, which makes 6 cups, is a Yummly original created by Rima Kleiner.

- 12 oz. linguine
- 3 cloves garlic
- 1 lemon
- 3 1/2 Tbsp. extra-virgin olive oil (divided)
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 2 cans sardines (skinless, boneless, 3 1/2 oz. each, drained; or 3 cans if you like)
- 3 Tbsp. capers (drained)
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/4 cup panko breadcrumbs
- 2 Tbsp. chopped fresh parsley

Directions
- Bring a large covered pot of hot tap water to boil. Cook linguine according to package directions. Meanwhile, mince garlic. Zest and juice the lemon (you should have about 4 Tbsp. juice); set garlic and lemon aside.
- Reserve 1/2 cup pasta cooking water, then drain pasta. Return pasta to pot with 2 Tbsp. reserved pasta water and 1 Tbsp. olive oil; toss with tongs. Save remaining reserved pasta water. Cover pot to keep pasta warm.
- In a large saute pan or frying pan, heat 2 Tbsp. olive oil over medium heat. Add garlic, red pepper flakes, salt, and pepper; cook, stirring often, until garlic is golden, 1-2 minutes. Add sardines, capers, oregano, basil, and lemon zest and lemon juice; stir and heat about 1 more minute.
