Description
This family-friendly pairing of salmon, lemony pasta, and sun-dried tomatoes is a great way to get everyone to eat more heart-healthy fish. It relies on affordable and nutrient-rich pantry staples, including whole-grain pasta and canned salmon. As a bonus, the recipe comes together in a single pot in 30 minutes, with little prep! The recipe, which makes about 11 cups, is a Yummly original created by Rima Kleiner, MS, RDN.

- 1 lb. whole wheat penne (or fusilli, rotini, or other favorite pasta; or gluten-free pasta)
- 2 lemons
- 4 cloves garlic
- 5 Tbsp. extra-virgin olive oil (divided, plus more to taste)
- 1/2 tsp. kosher salt (divided)
- 12 oz. canned salmon (boneless, skinless, or use a pouch of salmon; drained)
- 1/2 cup sun-dried tomatoes (julienned, oil-packed, regular or with herbs)
- 5 oz. baby arugula
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes (or 1/2 tsp. if you like more heat)
- 1/4 cup finely shredded Parmesan cheese (preferably freshly shredded, plus more for serving)

Directions
- Fill a large pot with hot water, cover, and bring to a boil over high heat. Cook pasta according to package directions until barely tender to bite (al dente), 11-13 minutes.
- Meanwhile, zest and juice 1 lemon. Cut remaining lemon into wedges. Mince garlic and set ingredients aside.
- Scoop out 1 1/2 cups pasta water and set aside. Drain pasta and transfer to a large bowl. Toss pasta with 1 Tbsp. olive oil and 1/4 tsp. salt to lightly coat; set aside.

It was decent, pasta came out a bit dry, maybe add some butter to the sauce? Or more pasta water? Not sure. Definitely wasnt bad! Just needs some tweaking.
