- 1 lb. ground pork sausage (sweet Italian)
- 1/2 lb. double smoked bacon (cut in dice)
- 32 oz. marinara sauce (your favorite)
- 1 tsp. Worcestershire sauce
- 1 tsp. red wine vinegar
- 1 cup diced onion
- 1 cup diced celery
- 2 Tbsp. olive oil
- 2 Tbsp. minced garlic
- 1 cup dry red wine
- 2 bay leaves
- 3 sprigs thyme
- 3 sprigs rosemary
- 1 cup milk
- 1 cup heavy cream
- 1 cup ricotta cheese
- 2 Tbsp. butter
- 2 Tbsp. all purpose flour
- salt
- cracked black pepper
- Parmigiano-Reggiano

Directions
- In a medium to large sauce pot, heat the oil on medium heat and add the sausage. Start to brown the sausage and break into small pieces using a wooden spoon or something similar. Add the bacon and continue to cook, rendering the bacon fat.
- Add the onions, celery, and garlic and sweat until the onions are translucent.
- Tie the herbs (bay leaves, thyme, and rosemary) together with some cotton butcher’s twine. (If you don’t have any, just toss in the herbs and fish them out later.) Note: You can also buy the herbs as "poultry roasting herbs" in store.
