- 500 grams gnocchi (packet, cooked according to instructions OR Vegalicious gnocchi)
- 1 brown onion (medium, diced, ~1 cup)
- 1 large carrot (finely chopped, spiralled or grated, ~ 1 cup)
- 1 zucchini (large, finely chopped, spiralled or grated, ~1 cup)
- 1/2 eggplant (small, finely chopped, ~1 cup)
- 1 tsp. olive oil (optional, or use few tablespoons water instead)
- 3 tsp. vegetable stock powder (choice, or to taste)
- 400 grams lentils (or 1¼ cups cooked brown lentils)
- 400 grams diced tomatoes (can 100%)
- 3 Tbsp. tomato paste
- 1/4 cup water
- 1/2 cup fresh basil (stems and leaves, tightly packed)
- 1 cup sunflower seeds (or pumpkin kernels)
- 1 clove garlic (fresh, chopped)
- 3/8 tsp. vegetable stock powder (or Himalayan rock salt, to taste)
- 1/3 cup lemon juice (freshly squeezed, ~ 2 lemons)
