These are overall pretty good. I used coconut flour instead of almond. The texture of the chocolate is a bit weird and I needed to double the amount of chocolate needed to cover them. Now, that might be because it’s super hard to roll them around in the melted chocolate without making a mess of them. Getting them back onto the pan without the chocolate coming off or getting too much chocolate on the spoon when trying to get them out isn’t as easy as it might seem because its a bit lumpy (yes, the chocolate was fully melted but it has a weird lumpy/gritty texture). Not sure what makes it like that but I would suggest doubling the chocolate and giving more time for the peanut butter to fully freeze solid before trying to coat them. Otherwise pretty good just not easy.

Husband craves peanut butter and chocolate! Many restrictive changes since Keto! He LOVES these PB Balls! I made them quarter-sized so he could eat 3-4 at a time I freeze them so they can melt in his mouth!
He said “They’re absolutely perfect! They take care of my craving for sweets!”
Some are dipped in chocolate but I ran out so a few were frozen plain.

Had extra chocolate for this many treats. I like my treats sweeter but I’m not the keto eater in the house. Pretty good. Update - a year later I’m eating these while I fast from sugar and I am loving them!
