I made 2 batches of this fudge. The first time as recipe is given and it was a bit too sweet for me. So I will cut down on swerve next time. The second time I substituted 8 oz (by weight) of coconut oil for the butter, 5.5 oz of swerve but was still too sweet for my taste. I think I'll use another reviewer's suggestion and try monk fruit next. Both times I made the fudge using 6 oz of Lindt 78% cocoa dark chocolate bars chopped in pieces. Very happy with the depth of chocolate in the final result. For those who enjoy the taste of coconut oil as I do you might try it as an alternative to the butter. I thought the butter taste a bit overwhelming in the original batch. I'm also going to try combining the butter and coconut oil - 4oz of each - for a milder buttery coconut flavor I added chopped pecans the second time. Put all ingredients together in microwave safe bowl, nuke and stir 30 seconds at a time on 50% power, just until melted and blended. I pour melted mixture into silicone molds with square sections so I don't even have to cut it. The end results for both was smooth, silky, fudgy wiith no separation of ingredients at all. This keto fudge is easily adapted to individual tastes, super fast to make - no time at all from microwave to freezer with a minimum of cleanup needed.

I’ve never made fudge and this was so easy! Perfect for dark chocolate lovers. Might try adding sugar free peanut butter next:)

Does have the consistency of fudge, a little on the buttery side, but still very satisfying as a keto recipe. I used splenda as the sweetner. Not sure the comparison to regular sugar, but should of added at least another 2oz as it was still on the bitter side. Will be making again with a bit more splenda.

Good. It was good. I didn’t use baking chocolate but I used simi-sweet morsels and it was good. Also might have accidentally put in a little to much heavy whipping cream because I spilled some... BUT WHATEVER!!! It still turned out great.

This turned out great. I only had 4 oz of baking chocolate and it turned out amazing. For a Keto desert it was very good!

Is there some trick to keep the ingredients from separating when you chill it? The butter went to the top in an unappetizing top layer so I couldn't serve it.

Fantastic!!! Loved every bite. Added walnuts for crunch.

I love this so much. I found that it did not have an "alternative" taste, but tasted just like the decadent fudge I'd expect to buy commercially. Serving size is quite generous so it really satisfies the sweet tooth and is worth the (still relatively low) amount of calories. I only had five ounces of chocolate so I used one ounce of peanut butter too and that was a perfect amount for me.

I will need to try again, it was inedible with a very bitter taste. I will try a different sweetener next time.

My third attempt worked... The first attempt I used swerve for the sweetener and it had a terrible after taste. Second try I used Splenda but had too much cocoa (didn’t have the Unsweetened chocolate bar) ... Third try, had unsweetened chocolate bar and used a mixture of xylitol and Splenda and added 1/2 cup chopped pecans. Even though the butter separated in the refrigerator and it looks weird and taste delicious. Not really sure why the butter separated. Any clues?
