- 4 Tbsp. unsalted butter (cut into pieces, for sandwiches)
- 2 lb. turkey breast (1/4-inch-thick slices)
- 1 1/2 sharp white cheddar cheese (shredded, or white cheddar slices)
- 1/2 cup freshly grated Parmesan cheese

Directions
- Sauce: In a small saucepan, bring milk to simmer.
- In a medium saucepan, melt butter. Add flour and whisk for one minute over medium heat.
- Whisk in hot milk and bring to a boil. Cook until thickened while continuing to whisk for 5 minutes.
