- light olive oil
- 5 cloves garlic (chopped)
- 1 cup pearl onions (fresh, trimmed, peeled)
- 3 gold potatoes (good sized hefty, peeled, cut up)
- 3 carrots (good sized, peeled, sliced)
- 2 celery stalks (sliced)
- 1 cup table wine (dry red)
- 4 cups beef broth (organic, I used Organic Better Than Bouillon- check labels!)
- 1 Tbsp. balsamic vinegar
- 2 tsp. herbs (dried Italian or French, to taste, thyme, sage, rosemary)
- 1 bay leaf
- ground pepper (to taste)
