I cooked chicken thighs half through, and then cooked them the rest of the way with the rice instead of using chicken breasts. I feel like the thighs give the rice more flavor. Other than changing the chicken, I followed the recipe, and it turned out delicious. It wasn’t too spicy.

Delicious. I used brown rice so added a bit of chicken stock towards the end to cook the rice a little better. Would use standard rice next time.
