Adapted from Crock-Pot slow cooker recipe. I leave out the celery.
Ingredients

- 1 lb. boneless skinless chicken breast (cut into 1 inch pieces)
- 1 lb. shrimp (cooked tail-off)
- 3 cups cooked brown rice
- 2 bell peppers (chopped)
- 1 sweet onion (chopped)
- 14.5 oz. diced tomatoes
- 14.5 oz. beef broth
- 6 oz. tomato paste
- 4 tsp. minced garlic
- 3 tsp. dried parsley
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. cayenne pepper
- 1 tsp. hot sauce

Directions
- Add all ingredients except shrimp and rice to Crock-Pot
- Cover; cook on Low 8 to 10 hours (High: 3 to 4 hours)
- Add shrimp during last 30 minutes
- Stir in rice when ready to serve
