Worked great, used rice vinegar instead of sherry and turned out fine. Also used about a 1/4 cup more meat to balance my ingredients.
Fun recipe and delicious all in all!

I made them a little too salty but still an excellent dish. Make sure you roll the dough real thin before adding the filling.

I had never actually eaten Chinese Dumplings before so it was a whole new world for me! But that also means I had nothing to go off of.
The results weren't what I had expected, but were terriffic! Just don't make the dumplings too thick with dough, otherwise you won't get the full flavor of your dumplings. Also, don't use Spicy Sememe Oil, this'll make the dumplingd over spicy (in my opinion).
