These zucchini cakes are perfect to make in the summer when your garden and kitchen are overflowing with the versatile green squash. Grated zucchini is mixed with onions, eggs, corn flakes, and parmesane cheese to form a savory and decadent patty. - 5 Tbsp. corn flakes (ground)
- 1/4 cup Parmesan cheese (shredded)

Directions
- Mix the zucchini, onion, egg, corn flakes, Parmesan cheese, garlic powder and salt and black pepper in a large bowl.
- Grease a deep wide skillet with the olive oil and heat on medium-high heat.
- Form the cakes by adding 2 tablespoons mixture for each one directly on the skillet. Cook for 5 minutes, flip them, and cook for 5 more minutes and serve.
