  • 10 tomatoes (cocktail, depending on size, washed and dried)
  • 1 can tuna (in brine)
  • 4 anchovy fillets (in oil)
  • 1/2 teaspoon capers
  • 4 tablespoons mayonnaise

    Directions

    1. Cut off the top of the tomatoes, and set the tops aside.
    2. Gently scrape out the tomatoes, being careful not to pierce the bottom.
    3. Place upside down to drain, on a grill or plate.
    4. Blend the tuna, anchovies, and capers in a food processor fitted with a blade. Pour mixture into a bowl. Add mayonnaise and mix. Fill the tomatoes with the mixture and put the tops or hats back on tomatoes.
    5. Refrigerate before serving.
