The classic chicken casserole gets an Italian makeover when fresh herbs and tomato sauce meet boneless skinless chicken breasts.


  • 1 cup Tyson® Frozen Boneless Skinless Chicken Breasts (Tyson®, cubed)
  • 1 cup elbow macaroni
  • 2 tablespoons olive oil
  • 2/3 onion (diced)
  • 1 clove garlic (minced)
  • 1 can diced tomatoes (14.5 oz.)
  • 1 1/4 cups mozzarella cheese (shredded)
  • 1/4 cup parsley (fresh, chopped)
  • 1 kosher salt (to taste)
  • 1/4 teaspoon ground black pepper
  • 1/4 cup bread crumbs
  • 1/3 cup Parmesan cheese (grated)
  • 3 tablespoons butter (divided)

    1. Preheat oven to 400°F. Coat 8x8x2 inch baking dish with 1 tablespoon butter.
    2. Bring medium sized pot of lightly salted water to a boil over high heat. Once boiling, add pasta and follow pasta instructions. When tender, drain pasta and set aside.
    3. Meanwhile, place olive oil in a medium sauté pan over medium heat. Add chicken and cook for 3 minutes. Add onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes.
    4. Combine chicken mixture with the cooked pasta in large bowl. Add canned tomatoes with juice, mozzarella cheese, parsley, salt and pepper. Mix gently until all ingredients are evenly distributed. Place mixture in prepared baking dish.
    5. In a small bowl mix together bread crumbs and Parmesan cheese. Sprinkle on top of pasta. Dot the top with slices of butter. Bake until top is gold brown, about 30 minutes.

    I tried this recipe and it was amazing!! Definitely double if you are serving over 4 people. I would add more bread crumbs but overall this is going in the recipe book!

    My rating: 5 stars Boyfriends rating: 3 stars I really enjoyed this dish although my boyfriend is not a fan. There’s not a whole lot of flavor to it but I personally like that. It’s super simple and few ingredients. I’ll definitely be making this again using it for meal prepping so I can take this to work for lunch. I just added garlic salt. Had to add tomato sauce for my boyfriend!

    It was good. I used what pasta I had which was rotini. My chicken breast was preseasoned so I didn’t use any of the seasonings in the recipe. Everyone thought it would be something they’d like again.

    Great recipe but it was a little bland. I added additional seasoning. Would be much better with Alfredo sauce.

    Yummy! I used penne pasta instead of elbow, cooked the onions a little longer until they carmelized, and I didnt top with butter. I wish I had fresh grated parm tho to sprinkle on after.

    It was very goos, but too much tomato for me. Not a fan of tomatoes and my noodles were a little crunchy. But overall, my family loved it ❤️

    My family loved it. I doubled all ingredients except the chicken and it was still plenty of meat. I'm running low on butter, so I mixed the breadcrumbs with olive oil and also added Italian seasoning as per another reviewer's suggestion. I feel like it would have been pretty bland without the extra seasoning, so that's where it loses the star.

    It was good. I wasn't sure at the first bite, but it kept getting better. I did add Italian seasoning to the topping anf I'm glad I did.

    This casserole was very tasty, but I made a number of changes after reading the reviews. I added a cup of marinara sauce and that seemed like a good choice. I also added a lot of dried basil, thyme and oregano and a few sprinkles of red pepper flakes. I also put a little more parmesan than the recipe called for. I might add more bread crumbs next time because I prefer it to be a little crispier. I think these additions made the recipe much better, I imagine it would be bland and dry without them. Overall, a good recipe - it just needed some sprucing up.
