Delicious. i had my doubts with the limited ingredients but they came out perfect. i did refrigerate them for about two hours and that gave them just the right amount of firmness for the dough.
I didn't have almond flour so I used rice flour as a substitute and it worked out perfect.

These are absolutely phenomenal! To Ness's point, they are rather wet when they go into the oven, but boy do they come out a dream! The cookies have a similar consistency to macarons - they just fall apart in your mouth. I highly recommend these - they're gluten-free and don't taste terrible, too!
