Very flavorful. I substituted half the brown rice with 3/4 cup of dried green lentils, adjusted the water, and it turned out great. I also reduced the chili powder as my kids don’t like spicy. Mixture worked well for burritos and quesadillas. I will certainly make again on a night when we want to eat veggie.

Tasted yummy! I changed up a few things. Substituted corn with rotell tomatoes (not drained) and chiles, added cayenne and jalapeño because I like lots of spice. Used a gratuitous amount of vegetable broth, plus the salsa. Easy to freeze for leftovers. And excited to try with corn chips as a bowl type dish. Thanks!

Flavorful and delicious! The perfect filling for our burritos. I made with white basmati rice and pressure cooked for 12 minutes. Will def make again

This was delicious! I only put in the instant pot for 10 mins on high pressure and it was cooked perfectly. I used jasmine rice as I didn’t have any short grain. Super quick and delicious 💓

Great! I used Fire Roasted Salsa Tomatoes in place of salsa and added a can of green chiles and served as a burrito/salad bar with diced avocado, lettuce, heirloom tomatoes and cilantro. DH and teen son loved it !
