- 10 pepperoncini peppers

- 1 packet au jus mix (1 oz. per packet, or brown gravy mix)
- 3/4 stick unsalted butter (3/4 stick is 6 Tbsp.)

Best pot roast ever! I always double it and it is so versatile. Serve over egg noodles or potatoes or shred and makes sandwiches or quesadillas. Really it’s great over anything.
I hate browning in the instant pot though so I do that in a deep sauté pan.

I made this just last night though I did make a couple of alterations. I added an entire 16oz jar of pepperoncini's with their juice (It was delicious but so vinegar forward. I do not recommend unless you like snacking on tums.) and only added half of the butter since others said that it was really fatty. With those 2 changes it wasn't fatty at all though I would probably not repeat my mistake with the peppers and only use half of the jar at most. Even without that though the flavors in this are solid and I will definitely be making this again.

It was so delicious! I loved the tangy flavor from the peppers. A little fatty, skimming it before making gravy would help I will make this again

I used Lipton onion soup mix instead of brown gravy mix, used more than 10 peppers and some pepper juice. What a tasty meal, served with mashed potatoes and green beans. Definitely making again.

great dish,
I've made this before but this was my first time in the instant pot. turned out great.
now per directions it says to add ranch and gravy mix then meat.
i had beef broth yhen meat, peppercinis, then i mixed gravy and ranch in a bowl and put on yop of meat and put butter on top cut into tablespoon size pieces. also added whole can of beef broth in the beginning instead of the cup.

Delicious! I added a little peppercini juice to the gravy and we ate it with mashed potatoes and fresh broccoli! I am almost embarassed to say we ate all the roast!

Follow the instructions exactly to a delicious dinner. I did not season the meat before browning because some reviews said the final product was too salty (it was not at all). I strained the broth and used a fat separating measuring cup before making the gravy, came out silky smooth. Served over mashed potatoes with roasted carrots on the side. I foresee this dish in my future on a regular basis.

The pepperonis add just the right boldness, but not too much heat.

Unbelievable! A little salty but next time I will use a bit less Au Juis pack. We put diced Jalapenos and juice in the mix as well.

Made it with garlic mashed potatoes and it was delicious. Used a smaller cut of meat because I made it for 2 people

Very tender and flavorful. I have cooked a lot of roasts with this recipe but this time I cooked some small red potatoes, carrots, and onions in the juice after I cooked the Roast for 5 minutes and they came out great. Definitely will be doing this meal again.

Fabulous. I used French onion soup mix and water instead of broth as noted by others. Added whole mushrooms. Did not.thicken, rather used it like Italian beef on warm garlic bread for sandwiches. Wow!
