it tasted pretty good, but i had to move it from the instant pot. within 10 minutes my machine had burned the bottom layer of rice.

Delicious. Used white rice and cubed thighs since that is what we had and homemade enchilada sauce. Added a can of corn at the end. Will make often.

Pretty good...next time I think I’ll jazz it up with some green chilis, diced tomatoes or some salsa. Definitely has potential 👍🏻

Delicious! I only had a 19 oz. can of enchilada sauce, so I increased the rice and water to 2 cups each. I stirred in a drained can of corn after it was done. We topped it with shredded cheddar, sour cream, and I also used chopped jalapeños. My husband ate as is, and I ate on some lettuce wraps.
