This was my first Instant Pot pressure cooker recipe! (I started with familiar slow cooker territory.) It was easy and delicious. I actually used frozen drumstick medallions, just sautéed 5 minutes as directed for the frozen meal option and then added the other ingredients before pressure cooking. I bumped cook time up to 15 minutes but probably didn’t need to go quite so long since they were pretty small pieces of chicken; they were close to 180 degrees but tender and delicious. I served over rice instead of chips. Will come back to this one for sure!!
