This stew was delicious! I tried to follow
the recipe exactly with two exceptions: I didn’t have Ranch Dressing mix so I used 2 Tbls thick Ranch Dressing. I also added 1 C Cabernet Sauvignon for flavor.
My husband and I thought the broth was delicious.
I had two problems: (1) I sautéed the beef coated with flour. The flour browned and stuck to the pan. I deglazed the fond with broth. However, the stew meat was tender but grey with no char. (2) The carrots were absolute mush followed closely by the potatoes and celery. The sauce was soupy and very thin likely d/t the added cup of wine
I’ll definately make this again but I will saute the meat without the flour coating. Then I’ll IP the meat in some broth for 27-28 minutes. Finally I’ll manually depressure the IP and add all veggies with a flour/wine slurry. I’ll turn the IP back on for just 2-3 minutes. Lastly, I’ll let it depressurize naturally. I’m hoping this answers the problems I had.
My normal Beef Stew recipe is baked in the oven for several hours. I start browning the beef, add tapioca and broth. Lastly I’ll add the veggies for the last hour. This baked stew turns out perfect every time but it’s an all day bake.
While the prep times for the oven and this IP recipe are the same, the cook time is hours different. Thanks for sharing this recipe!

Very good! Great weeknight meal. I didn’t have the ranch mix but I’m sure that would have added a nice touch.
