This is a simple yet elegant meal to serve at a dinner party. I did substitute Marsala wine for the sherry. I also sous vide the filet mignons to a perfect medium rare then placed it on top of the pastry with cooked mushrooms. I made the pouch. In the past I would make it in the oven but yesterday I did an egg wash over the pastry pouch and then placed it in the air fryer at 350 degrees for about 10 minutes.
