- 1 shallot
- 1 carrot
- 1/2 red pepper
- 1/2 yellow pepper
- 1/2 green pepper
- 250 grams basmati rice
- coconut milk (20 cl.)
- 1/2 can chopped tomatoes
- 6 tsp. curry powder
- 2 tsp. turmeric
- 2 tsp. ginger puree
- 1 cube vegetable stock
- 60 grams peas
- water (50 cl.)

Directions
- Mince the shallot. Clean and dice the carrot, red pepper, yellow pepper, and green pepper.
- In a pot, combine the basmati rice, coconut milk, shallot, chopped tomatoes, curry, turmeric, ginger puree, vegetable stock cube, peas, diced carrot and peppers, and water. Bring to a boil and then reduce the heat. Simmer for about 30 minutes.
- Once the rice is cooked, mix well. If the rice seems too dry, you can add a little water. Adjust the seasonings if necessary.
