Description
Couscous is a wee little pasta made of semolina flour and if you’re not cooking it on weeknights you’re missing out. It cooks in seconds and offers a blank canvas for any culinary creation. In this recipe, we amp up the couscous with pickled peppers, pistachios, and crunchy snap peas. We pair it with gorgeous filets of wild salmon, coated in curry, and sauteed in a sticky sweet glaze. We hope our creative combination of flavors and textures in this dish will inspire you to see what you can create with couscous in your kitchen.

- pickled peppers in oil (2 tablespoons oil and ½ cup peppers)
- 4 filets salmon
- 1 Tbsp. curry powder
- 1 Orange
- 1/4 cup pistachios (or any nut you have in the pantry)
- 1 cup couscous
- 1 Tbsp. honey
- 1 cup snap peas
- salt (staples)
- yogurt (nice-to-have)
- mint (nice-to-have)

Directions
- equipment: large pan for salmon, grater or microplane
- Place your large pan over medium/high heat. Drizzle the pickled pepper oil in the pan. Season the salmon filets with curry powder and salt. Add your salmon filets to the pan, seasoned side down, away from you. Now season the second side with curry powder and salt and let cook. Get some water boiling for your couscous, about 2 cups.
- Meanwhile, zest the orange, then cut it in half and set aside. Roughly chop the pistachios and pickled peppers and set aside.

Ehh it’s okay. I’m not a fan of the orange flavor on the salmon. But this is just a preference. Probably not going to make this again.

This was sooooooo good! My husband literally said, “This food is stroking a musical chord in my mouth!”, and, “This is flavor town, USA”!
I used sun dried tomatoes ‘cause I couldn’t find pickled peppers and also didn’t put the pistachios in because he can’t eat nuts and it was still awesome!!!

Super flavorful! After cooking the salmon and glaze, I flash steamed the snap peas in the same pan and then added the couscous back in which flavored it with all of the pan drippings. Extra flavor boost!

So good. The only thing is that couscous is not as simple as putting boiling water, at least not in my case. Keep that in mind.

it was pretty good. added some sweet corn and diced up some tomatoes to add to the couscous, which was nice. easy and tasy meal.

Not great. Salmon turned out perfectly cooked, but the glaze was a little overly sweet and the couscous was bland.
