Flavor was good but the texture was gummy. I tried baking them an additional 30 minutes and even that didn’t help.

Very good and easy to make. I've made them multiple times and each time they turn out great!I also realized that the base (chickpeas, carrots, celery, garlic, bread crumbs & vital wheat gluten) can be flavored however you want.
I tried it with that McCormick meatloaf seasoning and it came out really good.I'm wondering if it'll work with poultry seasoning for a Thanksgiving loaf. Gotta try that next!

Pretty tasty! This was my first time ever using Vital Wheat Gluten. I've been wanting to make mock meats forever but was always intimidated. This recipe was fool-proof.
Note: I would skip the chickpeas next time, they added a weird fibrous texture cause I left the skins on. Also, I cooked recipe as intended but then covered it with foil because it was too early for dinner. When I was ready to eat I took the foil off, added some brown sugar to more ketchup and brushed the tops and reheated at 375F until sizzling. Yum!

Very good but next I would use fire roasted tomatoes instead of tomato paste

pretty good loaf mixture, but the amount of ketchup in it was too much. no one liked it. i would try again and reduce the ketchup by half.
