Scrape peel from the ginger with a spoon, then finely grate ginger into a large bowl. Thinly slice the scallions, chop the cilantro, and mince the garlic. Add all to the bowl. Zest and juice the lime and add to bowl with the fish sauce and sriracha. Add the ground turkey and salt.

Mix thoroughly with your hands until ingredients are well incorporated. Dampen hands and divide the turkey mixture into 8 equal-sized patties, about 1/2-inch thick and 3-inches wide.

Heat the oil in a large nonstick skillet over medium-high heat. Add the patties in a single layer and cook until well browned, turning once, 4-5 minutes on each side. Meanwhile, prepare the vegetables for serving.
PRO TIP A cooked patty will feel firm in the middle.

Thinly slice the Thai chilies, if using. Rinse the lettuce, mint, and cilantro and wrap in a towel.
PRO TIP If you can't find Thai chilies, you can substitute with a fresh serrano chili.

Cover the pan of turkey patties and cook until they are cooked through, about 5 minutes. Remove from heat.
