- nonstick cooking spray
- 1 1/2 cups mixed vegetables (like broccoli, peppers, asparagus, baby spinach, etc.)
- 1 scallion
- 1/4 cup water
- 2 cups liquid egg whites (from about 16 large eggs)
- 1 tsp. salt
- 1/4 tsp. black pepper

Directions
- Preheat oven to 350°F.
- Spray a 12-cavity muffin tin generously with nonstick cooking spray.
- Finely chop the scallion and set aside. Finely dice the vegetables and place in a large skillet.

Got the idea from you, appreciate that! I I chopped up already cooked bacon and turkey sausage (didn't have any veggies handy), put it in the cups then added egg whites (a little below the top, baked 350 for 20 mins, topped with cheese and put back in the oven (off) for 1 min to melt the cheese. A little dab of salt and pepper adds great flavor. Dry? I also used the chipotle dip from Chik-Fil-A... I will be doing your EXACT recipe next time!

So good and so easy! I cooked mine for 20 minutes and it was the perfect amount of time. Next time I may add a little bit of cheese!

Cooking time was a tad too long, so they stuck to the pan, but other than that, great!
