Delicious! Soft and creamy with just a touch of sweetness. I did omit the lemon zest (not a fan). Made into 6 "cupcakes" in silicone liners and baked 15 minutes. Came out perfect. Topped with a little bit of cashew cluster crumbs.

It tastes good but not great. I recommend making it a flvor:. lemon, caramel, chocolate, whatever. It needs something.
Kind of an odd texture. Doing it again, I would split the cottage cheese with some neufchatel.
