- 1 pinch crushed red pepper flakes
- 1 1/2 lb. boneless skinless chicken thighs (or breasts, cut into bite-sized 1” cubes)
- 1 egg
- 3/4 cup cornstarch
- 2 Tbsp. vegetable oil
- 1 Tbsp. cornstarch
- 1 Tbsp. cold water
- 1 red bell pepper (de-seeded and cut into 1" pieces)
- 1 green bell pepper (de-seeded and cut into 1" pieces)
- green onion (Chopped, optional garnish)

This was tasty! I left the red pepper flakes out so it was kid friendly, and I served it over steamed rice. There wasn’t a ton of sauce since most just cooked onto the chicken and veggies, so next time I’ll double the sauce since we like things saucy!

Hawaiian Pineapple Chicken is a keeper! Next time I will double the sauce recipe and serve with Jasmine rice.

It was okay. I thought it was a little bland considering everything that went into it. The kids loved it though. I will definitely be making it again but it's not good enough to make it into regular rotation.
