Delicious! Made a few substitutes: raisins instead of dried cranberries, red instead of yellow onions. Diced apple instead of grating. And combined sweet potato & carrots. A drizzle of melted butter really enhances the flavors. Also skipped the nuts & sage, but would like to try that another time. And I had too much stuffing, so I used extra to top each squash half. Bake time increased by about 15 minutes to get the squash nice and tender. This would also be good with ground turkey or mild Italian sausage: pretty sure. Definitely a keeper!

Everyone loved this. Had to make a couple of adjustments due to missing ingredients, replaced sweet potato with a little shredded carrot and a yellow squash. Add in celery and mushrooms that needed to get used. Used wild rice for the grain. This is a great recipe that can be easily adjusted for veggie preferences or when veggies need to get used. Will definitely keep this in the rotation for meatless meals!

This is my carnivorous husband's favorite dinner, and he asks that I make double batches (for leftovers)! I do make a few changes - marinate 8 oz tempeh in 1 T each of liquid aminos and maple syrup and then cut crosswise into 1/4" strips. Because I am gluten-free, I use either all wild rice or a wild rice blend rather than the barley. This is a phenomenal dish and is sooo satisfying for hours!
