Ingredients
- 1 chorizo sausage (turkey)
- 1/2 onion (sliced into half moons)
- 2 breads (telera Mexican flat, or ciabatta bread)
- 2 Tbsp. mayonnaise
- 2 slices turkey breast
- 2 slices mozzarella cheese
- 2 Tbsp. mustard
- pickles (optional)
- jalapeno chilies (optional)
Directions
- Heat a large skillet and cook the chorizo until golden brown. Place on absorbent paper to remove the excess fat. Wipe off the fat from the skillet and turn the heat on again.
- In this skillet, saute the onion until transparent. Set aside.
- Cut the bread in half and heat on a griddle.
- On the bottom half, spread a tablespoon of mayonnaise, then add the turkey breast, cheese, chorizo, and onion. On the top half, spread mustard. Close the sandwich and place over heat in a skillet until the cheese melts. Add the pickles, and chilies if desired. Serve.
