- 3 lb. beef chuck roast (trimmed of excess fat and cut into bite-sized pieces)
- kosher salt
- cracked black pepper
- 1 yellow onion (or large white, peeled and diced)
- 4 cloves garlic (peeled and minced)
- 1/3 cup flour
- 12 oz. Guinness Beer
- 4 cups beef stock
- 3 large carrots (peeled and diagonally sliced into bite-sized pieces)
- 1 1/2 lb. yukon gold potatoes (cut into bite-sized pieces)
- 3 Tbsp. tomato paste
- 1 bay leaf
- 1/2 tsp. dried thyme
- fresh parsley (optional garnish: chopped)

Base was really good but the stew overall is really bland. Added oregano, extra 2tsp Worcestershire, red pepper, extra salt/pepper. Still meh.

Only rating 5 stars because the base recipe is excellent; but it does need some work for additional flavor (it's pretty bland) and to get the thickness as shown in the picture (I followed the exact recipe and it does not turn out nearly as thick as pictured). So to fix the thickness and flavor issue, follow the recipe as stated. Then, after simmering for 2 hours, on a separate skillet, I added 2 tablespoons of butter, 1/4 cup of flour, whisk until spread evenly, then add 1/2 bottle of Guinness, 2tbsp of Worcestershire sauce, 1/2 to 1 cups of beef broth, salt and pepper, and made a gravy. I then added that to the beef stew to thicken it to a desired level. I then added a hint of rosemary, oregano, and red pepper flakes. Let that simmer for an additional 10 mins then salt/pepper to taste if needed and it was PERFECT! This will be my go-to beef stew in the future!

The base recipe was great but it was a bit bland, so I added more Black Pepper, Thyme, some Oregano, Cilantro, Worcester Sauce, Paprika and a little Cayenne Pepper.

didn't use the guiness, but picky boy went back for seconds so that tells me that this was a great pot of stew.

Made this for the second time and it was just as good this time as last. Easy to make and is a perfect comfort food on a cool winter evening.
