Nothing says summer like firing up the grill! Grilled pesto pork chops are a fresh way to enjoy pork chops! Served up with blistered tomatoes, grilled shallots and a zesty pesto, it'll be one of your go-to meals!

- 4 boneless pork chops
- 1/2 cup basil pesto (homemade or store-bought)
- 1 head garlic (separated into cloves)
- 2 tsp. salt
- 1 tsp. pepper
- 2 Tbsp. olive oil
- 2 cups tomatoes on the vine
- 1/2 cup shallots
- shaved Parmesan
- fresh basil leaves (for garnish, optional)

Directions
- Prepare the pork chops by removing them from the fridge and seasoning each side with olive oil, salt, pepper and pesto.
- Cover with plastic wrap and set aside for 30 minutes to marinate.
- Preheat the grill or the grill pan to medium high.
