- 1 seedless watermelon (small, cut into quarters)
- 1/4 cup grapeseed oil
- 1 Tbsp. honey
- 1/2 lime
- 1 pinch cayenne
- 2 Tbsp. fresh mint (chopped)
- 2 Tbsp. pumpkin seeds
- 6 oz. halloumi (sliced)

Directions
- Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
- Combine oil, honey, lime juice, cayenne and chopped mint in small bowl. Set dressing aside.
- Slice halloumi into ¼-inch slices. Arrange on Grill and cook 3-4 minutes per side. Remove from Grill and arrange on platter with watermelon. Drizzle with dressing and sprinkle with pumpkin seeds. Serve immediately.

Good! I added mango, watermelon, pears, pea shoots and pine nuts. I liked the dressing, but I think next time some fresh jalapeno chunks might be nice. It's a keepah!
