- 1 can diced tomatoes
- 2 cloves chopped garlic
- 3 bay leaves
- 1 Tbsp. fresh thyme leaves (coarsley chopped)
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 2 cups beef stock
- 2 Tbsp. worcestershire sauce
- 1 Tbsp. hot sauce (Cajun, used: Tabasco)
- 1/2 cup dry red wine
- 2 Tbsp. parsley leaves (finely chopped)
- 4 onion tops (green, sliced)
- grits (Baked Cheese, recipe follows)
- 2 Tbsp. butter
- 6 cups whole milk
- 1 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 2 cups grits (quick-cooking white)
- 2 cups sharp white cheddar (grated)
